Creamy Vegetarian Tortilla Soup

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent.
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in diced tomatoes, vegetable broth, black beans, corn, cumin, and chili powder. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Stir in the heavy cream or coconut milk. Season with salt and pepper to taste.
  5. Serve hot, garnished with tortilla strips and fresh cilantro.
