- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- 1 cup tortilla strips
- 1/4 cup fresh cilantro, chopped
- Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent.
- Add garlic and cook for another minute until fragrant.
- Stir in diced tomatoes, vegetable broth, black beans, corn, cumin, and chili powder. Bring to a boil, then reduce heat and let simmer for 20 minutes.
