  • 1 cup panko breadcrumbs
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/2 teaspoon cumin

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the flour, chili powder, garlic powder, paprika, salt, and pepper together.
  3. Dip the fish fillets in the egg, then coat with the flour mixture, and finally the panko breadcrumbs.
  4. Place the coated fish on a baking sheet and bake for about 15-20 minutes until golden and crispy.
  5. In another bowl, combine cabbage, cilantro, mayonnaise, lime juice, and cumin to make the slaw.
