Damn Good Vegan Lentil Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 2 cups spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Stir in garlic, cumin, and smoked paprika; cook for 1 minute.
  4. Add lentils and vegetable broth; bring to a boil.
  5. Reduce heat and let simmer for 30-40 minutes until lentils are tender.
  6. Stir in spinach and cook for another 5 minutes.
  7. Season with salt and pepper to taste; serve hot.
