- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup dried lentils, rinsed
- 6 cups vegetable broth
- 1 (14-ounce) can diced tomatoes
- 2 cups fresh spinach
- 1 tablespoon lemon juice
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery, sautéing until softened.
- Stir in the garlic, cumin, coriander, smoked paprika, salt, and black pepper. Cook for another minute.
- Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
- Reduce the heat and let it simmer until the lentils are tender.
- Stir in the spinach and lemon juice just before serving.
