Damn Good Vegan Lentil Soup

Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup dried lentils, rinsed
  • 6 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 2 cups fresh spinach
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, sautéing until softened.
  3. Stir in the garlic, cumin, coriander, smoked paprika, salt, and black pepper. Cook for another minute.
  4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce the heat and let it simmer until the lentils are tender.
  6. Stir in the spinach and lemon juice just before serving.
