Delicious Breakfast Enchiladas with Sausage Gravy Made Easy

A delightful recipe for breakfast enchiladas topped with a rich sausage gravy that are easy to make and perfect for any morning.

  • 12 corn tortillas
  • 1 pound breakfast sausage
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Drain excess grease.
  3. In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the egg mixture into the skillet with the sausage. Cook until the eggs are fully scrambled and set.
  5. Take a corn tortilla, add a scoop of the sausage and egg mixture, and sprinkle with cheddar cheese. Roll and place seam-side down in a baking dish.
  6. Once all tortillas are filled and rolled, pour any remaining sausage and egg mixture over the top and add more cheese if desired.
  7. Bake in the oven for 20-25 minutes, until the cheese is melted and bubbly.
  8. Serve warm and enjoy!
