  • 8 large flour tortillas
  • 1 pound breakfast sausage
  • 4 large eggs
  • 1 cup shredded cheese
  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the sausage until browned and crumbly.
  3. Whisk the eggs in a bowl and add to the skillet with the sausage, scrambling them together.
  4. In a separate saucepan, whisk together the flour and milk to make the gravy, adding salt and pepper.
  5. Once the gravy thickens, remove from heat and combine with cooked sausage and egg mixture.
