  • 8 large flour tortillas
  • 1 pound breakfast sausage
  • 2 cups shredded cheese (cheddar or your choice)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the breakfast sausage over medium heat until fully cooked. Drain excess fat.
  3. In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper.
  4. In the same skillet, add the egg mixture to the sausage and cook until the eggs are scrambled and set.
  5. On each tortilla, add a portion of the sausage and egg mixture, then sprinkle cheese and green onions.
  6. Roll up the tortillas and place them seam-side down in a baking dish.
  7. Pour any remaining sausage gravy over the top and sprinkle with more cheese.
  8. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
