- 8 large flour tortillas
- 1 pound breakfast sausage
- 2 cups shredded cheese (cheddar or your choice)
- 4 large eggs
- 1 cup milk
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the breakfast sausage over medium heat until fully cooked. Drain excess fat.
- In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper.
- In the same skillet, add the egg mixture to the sausage and cook until the eggs are scrambled and set.
- On each tortilla, add a portion of the sausage and egg mixture, then sprinkle cheese and green onions.
- Roll up the tortillas and place them seam-side down in a baking dish.
- Pour any remaining sausage gravy over the top and sprinkle with more cheese.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
