Detox Moroccan Lentil Soup

A wholesome and detoxifying soup that brings the flavors of Morocco to your table.

Ingredients

  • 1 cup green or brown lentils
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups kale, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. Stir in garlic, cumin, coriander, paprika, and turmeric; cook for another minute.
  3. Add lentils, broth, diced tomatoes, and bay leaf; bring to a boil.
  4. Reduce heat and simmer for about 25-30 minutes, or until lentils are tender.
  5. Stir in chopped kale and cook for an additional 5 minutes.
  6. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 4 days.
  • Feel free to add other vegetables like zucchini or spinach for more variety.
