  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the melted butter and sugar until well combined.
  3. Add in the eggs and mix again until smooth.
  4. Stir in the milk and vanilla extract.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Gently fold in the blueberries.
  8. Divide the batter evenly among the muffin cups.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add an extra tablespoon of sugar.
  • Can substitute blueberries for other berries if desired.
