  • 1 can (20 ounces) sliced pineapple, drained
  • 1 cup brown sugar
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a round cheesecake pan, spread brown sugar evenly, then layer the pineapple slices on top.
  3. In a mixing bowl, beat together cream cheese, granulated sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
