Instructions

  2. In a medium bowl, mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs, one at a time, beating well after each addition.
  5. Stir in vanilla extract and espresso powder until well combined.
  6. Fold in sour cream, mixing until smooth.
  7. Pour the cheesecake mixture over the crust.
  8. Bake for 50-60 minutes, or until the center is set.
  9. Let it cool and refrigerate for at least 4 hours before serving.
