  • 1 pound beef stew meat
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 carrots, diced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Add the beef stew meat, browning on all sides.
  4. Pour in the apple cider, bring to a boil, then reduce heat and simmer.
