Gingerbread Cake Cinnamon Molasses Frosting

A deliciously spiced gingerbread cake topped with a creamy cinnamon molasses frosting, perfect for holiday gatherings.

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup molasses
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another large bowl, beat the butter and sugar until light and fluffy.
  4. Add the molasses and eggs, mixing well before incorporating the dry ingredients.
  5. Gradually add the buttermilk and vanilla extract, mixing until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  9. For the frosting, beat together butter, powdered sugar, molasses, and cinnamon until creamy and smooth.
  10. Spread the frosting between the layers and on top of the cooled cake.

Notes

  • For a spicier cake, add more ginger and cinnamon as desired.
  • This cake pairs well with coffee or tea.
