Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, mix together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk eggs and sugar until fluffy.
  4. Add molasses, ginger, and cinnamon to the egg mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Spread the batter evenly onto the prepared baking sheet.
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Let it cool completely before frosting.
  9. For the frosting, whip the heavy cream and gradually mix in powdered sugar until desired consistency.
  10. Spread the frosting over the cooled cake, roll it up, and refrigerate before serving.
