Delicious peanut butter and jelly pop tarts that are gluten-free and perfect for a sweet treat.

Ingredients

  • 1 cup gluten-free flour
  • 1/4 cup powdered sugar
  • 1/2 cup peanut butter
  • 1/4 cup jelly or jam of choice
  • 1/4 cup cold butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons cold water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine gluten-free flour, powdered sugar, and salt.
  3. Add cold butter and peanut butter, mixing until crumbly.
  4. Stir in vanilla extract and cold water until a dough forms.
  5. Roll out the dough and cut into rectangles.
  6. Place a spoonful of jelly on half of the rectangles, then cover with the other half.
  7. Seal the edges with a fork.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let cool before serving.

Notes

  • For a crunchier texture, add chopped nuts to the filling.
  • Experiment with different flavors of jam.
