- 1/4 cup powdered sugar
- 1/2 cup peanut butter
- 1/4 cup jelly or jam of choice
- 1/4 cup cold butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons cold water
- Preheat your oven to 350°F (175°C).
- In a bowl, combine gluten-free flour, powdered sugar, and salt.
- Add cold butter and peanut butter, mixing until crumbly.
- Stir in vanilla extract and cold water until a dough forms.
- Roll out the dough and cut into rectangles.
- Place a spoonful of jelly on half of the rectangles, then cover with the other half.
- Seal the edges with a fork.
- Bake for 15-20 minutes or until golden brown.
