Gouda & Mushroom Stuffed Chicken

Ingredients

  • 2 chicken breasts
  • 1 cup gouda cheese, shredded
  • 1 cup mushrooms, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon thyme, dried
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until tender.
  3. Remove from heat and mix in gouda cheese and thyme.
  4. Cut a pocket in each chicken breast and stuff with the mixture.
  5. Season with salt and pepper, then place in a baking dish.
  6. Bake for 25-30 minutes until the chicken is cooked through.
