  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup tzatziki sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes, or until cooked through.
  5. In bowls, layer the cooked rice, meatballs, cucumber, and cherry tomatoes.
  6. Drizzle with tzatziki sauce before serving.
