  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 1/4 cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mash the bananas until smooth. Stir in Greek yogurt, honey, melted butter, eggs, and vanilla extract.
  3. In another bowl, mix the dry ingredients: baking soda, baking powder, salt, and flour.
  4. Gradually combine the dry ingredients with the wet mixture until just incorporated. Fold in chopped nuts if using.
  5. Divide the batter evenly among the muffin tin.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
