Grilled Salsa Verde Pepper Jack Chicken

A deliciously bold grilled chicken dish featuring Pepper Jack cheese and vibrant salsa verde.

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Pepper Jack cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil, garlic powder, onion powder, salt, and black pepper.
  3. Grill the chicken for about 6-7 minutes per side, or until fully cooked.
  4. During the last couple of minutes of grilling, top each chicken breast with salsa verde and then sprinkle with shredded Pepper Jack cheese.
  5. Close the grill lid to melt the cheese.
  6. Remove the chicken from the grill and let it rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken in the salsa verde for a few hours before grilling.
  • Serve with tortilla chips and extra salsa on the side.
