Grilled Thai Coconut Chicken Skewers

A delicious recipe for grilled chicken skewers marinated in a flavorful Thai coconut sauce.

  • 1 pound chicken breast, cut into cubes
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 8 wooden skewers, soaked in water

Instructions

  1. In a bowl, mix coconut milk, red curry paste, fish sauce, brown sugar, garlic, and lime juice.
  2. Add chicken pieces to marinade and let sit for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Thread chicken onto soaked skewers.
  5. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through.
  6. Remove skewers from grill and serve hot.
