  • ¼ cup coconut oil, melted
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • ¼ cup Greek yogurt
  • 1 cup fresh raspberries
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, melted coconut oil, honey, and vanilla until well combined.
  3. Press the mixture into the bottom of a lined baking pan to form the crust.
  4. In another bowl, beat the cream cheese and Greek yogurt until smooth.
  5. Add cornstarch and mix until just combined.
  6. Pour the cream cheese mixture over the crust and smooth the top.
  7. Scatter fresh raspberries on top and gently press them into the cheesecake layer.
  8. Bake for 25-30 minutes until set and edges are lightly golden.
