Hearty Cheddar Garlic Herb Potato Soup Recipe

Warm up with this creamy and flavorful potato soup, packed with cheddar cheese, garlic, and fresh herbs.

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until onions are translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Using an immersion blender, puree the soup until smooth. Stir in heavy cream and shredded cheddar cheese.
  4. Season with thyme, salt, and black pepper. Simmer for an additional 5 minutes before serving.
