Herb Roasted Chicken in Creamy White Wine Sauce

Delicious herb roasted chicken complemented by a creamy white wine sauce.

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and add the chicken. Brown both sides.
  3. Remove chicken and set aside. In the same skillet, add garlic and sauté until fragrant.
  4. Pour in white wine and let it reduce for a few minutes.
  5. Add the heavy cream, thyme, rosemary, salt, and pepper, stirring to combine.
  6. Return the chicken to the skillet, spooning some sauce over it.
  7. Transfer the skillet to the oven and roast for about 45 minutes, or until the chicken is cooked through.
  8. Let the chicken rest for a few minutes before slicing and serving with the creamy sauce.

Notes

  • For extra flavor, marinate the chicken in olive oil, herbs, and garlic for a few hours before cooking.
  • Serve with crusty bread to soak up the sauce.
