- 1 whole chicken
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup white wine
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Pepper to taste
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and add the chicken. Brown both sides.
- Remove chicken and set aside. In the same skillet, add garlic and sauté until fragrant.
- Pour in white wine and let it reduce for a few minutes.
- Add the heavy cream, thyme, rosemary, salt, and pepper, stirring to combine.
- Return the chicken to the skillet, spooning some sauce over it.
- Transfer the skillet to the oven and roast for about 45 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before slicing and serving with the creamy sauce.
Notes
- For extra flavor, marinate the chicken in olive oil, herbs, and garlic for a few hours before cooking.
