High Protein Broccoli Cheddar Soup

A delicious and hearty high protein broccoli cheddar soup with a twist of turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the broccoli and chicken broth, bringing to a boil.
  5. Reduce heat and simmer until broccoli is tender.
  6. Blend the soup until smooth, then return to the pot.
  7. Stir in the cheddar cheese and milk until melted and well combined.
  8. Season with salt and pepper to taste.
