  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups rolled oats
  • 2 cups powdered sugar
  • ½ cup vegetable shortening
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs one at a time, beating well after each addition, and stir in vanilla.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, then stir in oats.
  6. Drop by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 10-12 minutes, or until lightly browned. Remove from the oven and let cool.
  8. For the filling, beat together the powdered sugar, shortening, and vanilla until smooth and creamy.
  9. Once the cookies are cooled, spread the filling on the flat side of one cookie and sandwich with another cookie.

Notes

  • For chewier cookies, do not overbake.
  • Try adding chocolate chips to the cookie dough for extra flavor.
