- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 3 cups rolled oats
- 2 cups powdered sugar
- ½ cup vegetable shortening
- 1 teaspoon vanilla extract (for filling)
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
- Add eggs one at a time, beating well after each addition, and stir in vanilla.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the creamed mixture, then stir in oats.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes, or until lightly browned. Remove from the oven and let cool.
- For the filling, beat together the powdered sugar, shortening, and vanilla until smooth and creamy.
- Once the cookies are cooled, spread the filling on the flat side of one cookie and sandwich with another cookie.
