  • 1 and 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add in the eggs, one at a time, mixing well after each addition.
  5. Stir in the pureed strawberries and vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  10. Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

  • For an extra burst of flavor, add more strawberries in between the cake layers.
  • This cake can be topped with whipped cream for added richness.
