  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, ricotta cheese, Parmesan cheese, egg, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. While the meatballs are baking, cook the orzo in chicken broth according to package instructions.
