- 8 ounces elbow macaroni
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese
- 1/2 cup sour cream
- 1 avocado, diced
- 1/4 cup chopped cilantro
- Preheat your oven to 350°F (175°C).
- Cook the pasta according to package instructions; drain.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning, black beans, corn, and salsa; mix well.
- Combine the beef mixture with the cooked pasta and stir in sour cream and half of the cheese.
- Transfer mixture to a baking dish, top with remaining cheese.
- Bake for 20-25 minutes or until cheese is bubbly.
- Garnish with avocado and cilantro before serving.
