Loaded Taco Pasta Bake

A creamy, cheesy, and loaded casserole that brings all the flavors of tacos together in a comforting pasta dish.

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1/2 cup sour cream
  • 1 avocado, diced
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions; drain.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Stir in taco seasoning, black beans, corn, and salsa; mix well.
  5. Combine the beef mixture with the cooked pasta and stir in sour cream and half of the cheese.
  6. Transfer mixture to a baking dish, top with remaining cheese.
  7. Bake for 20-25 minutes or until cheese is bubbly.
  8. Garnish with avocado and cilantro before serving.

Notes

  • For a vegetarian option, substitute ground beef with lentils or mushrooms.
  • Can be prepared ahead of time and stored in the fridge before baking.
