Mango Tapioca Pudding (Mango Sago)

Mango Tapioca Pudding, also known as Mango Sago, is a refreshing summer dessert perfect for warm days.

Ingredients

  • 1 cup small tapioca pearls
  • 2 cups coconut milk
  • 1 cup mango puree
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 ripe mango, diced
  • 1/2 cup water

Instructions

  1. Soak the tapioca pearls in water for about 30 minutes.
  2. In a pot, combine the soaked tapioca pearls, coconut milk, sugar, and salt. Cook over medium heat, stirring frequently until the tapioca is translucent.
  3. Remove from heat and stir in the mango puree.
  4. Let it cool and then serve in bowls topped with diced mango.

Notes

  • For a creamier pudding, add some more coconut milk to the mixture.
  • Chill the pudding in the refrigerator before serving for an even fresher taste.
