- 1 cup small tapioca pearls
- 2 cups coconut milk
- 1 cup mango puree
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 ripe mango, diced
- 1/2 cup water
- Soak the tapioca pearls in water for about 30 minutes.
- In a pot, combine the soaked tapioca pearls, coconut milk, sugar, and salt. Cook over medium heat, stirring frequently until the tapioca is translucent.
- Remove from heat and stir in the mango puree.
- Let it cool and then serve in bowls topped with diced mango.
Notes
- For a creamier pudding, add some more coconut milk to the mixture.
- Chill the pudding in the refrigerator before serving for an even fresher taste.
