- 1 pound chicken breasts
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup heavy cream
- In a large pot, heat a little oil over medium heat. Add onions, carrots, and celery; sauté for about 5-7 minutes.
- Add garlic and cook for an additional 2 minutes.
- Add the chicken, broth, thyme, salt, and pepper; bring to a boil.
- Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
- Remove chicken, shred it and return to the pot.
- Stir in heavy cream and cook for another 5 minutes.
- Serve hot.
