  • 1 pound chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat a little oil over medium heat. Add onions, carrots, and celery; sauté for about 5-7 minutes.
  2. Add garlic and cook for an additional 2 minutes.
  3. Add the chicken, broth, thyme, salt, and pepper; bring to a boil.
  4. Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
  5. Remove chicken, shred it and return to the pot.
  6. Stir in heavy cream and cook for another 5 minutes.
  7. Serve hot.

  • For extra flavor, add some fresh herbs.
