Mediterranean Addictive Spinach Stuffed Pastry

Ingredients

  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup onion, finely chopped
  • 2 tablespoons olive oil
  • 1 package phyllo pastry
  • 1 egg, beaten

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions until translucent.
  3. Add spinach and cook until wilted; remove from heat.
  4. In a bowl, combine spinach, feta cheese, and beaten egg.
  5. Layer phyllo pastry sheets, brushing each with olive oil, and cut into squares.
  6. Place a spoonful of the filling on each square and fold into triangles.
  7. Bake for 20-25 minutes or until golden brown.

Notes

  • Serve with a yogurt dip for added flavor.
  • Can be made ahead and frozen before baking.
