  • 1 cup green bell pepper, sliced
  • 1 cup red onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, layer the fish fillets at the bottom.
  3. Spread the tomatoes, bell pepper, red onion, and garlic over the fish.
  4. In a small bowl, mix together the olive oil, lemon juice, oregano, salt, and pepper.
  5. Pour the olive oil mixture over the fish and vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the fish flakes easily with a fork.
