Mexican Potatoes

Learn how to make delicious Mexican potatoes with a twist of turkey bacon.

  • 4 large potatoes
  • 1 cup turkey bacon, cooked and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons olive oil
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for about 45 minutes or until fork-tender.
  3. In a skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  4. Stir in turkey bacon, chili powder, paprika, and cumin. Cook for an additional 5 minutes.
  5. Once potatoes are baked, cut them open and fluff the insides with a fork.
  6. Fill the potatoes with the turkey bacon mixture and top with cheddar cheese.
  7. Return to the oven for 5-10 minutes until cheese is melted and bubbly.
  8. Garnish with cilantro before serving.

Notes

  • For extra flavor, add jalapeños to the turkey bacon mixture.
  • These potatoes can be made ahead and reheated in the oven.
