- 4 large potatoes
- 1 cup turkey bacon, cooked and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1 cup cheddar cheese, shredded
- 2 tablespoons olive oil
- 1/4 cup cilantro, chopped
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake for about 45 minutes or until fork-tender.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
- Stir in turkey bacon, chili powder, paprika, and cumin. Cook for an additional 5 minutes.
- Once potatoes are baked, cut them open and fluff the insides with a fork.
- Fill the potatoes with the turkey bacon mixture and top with cheddar cheese.
- Return to the oven for 5-10 minutes until cheese is melted and bubbly.
- Garnish with cilantro before serving.
Notes
- For extra flavor, add jalapeños to the turkey bacon mixture.
- These potatoes can be made ahead and reheated in the oven.
