- 4 strips turkey bacon
- 1 cup corn
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/2 cup cilantro
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- Cook the pasta according to package directions, then drain and set aside.
- In a skillet, cook the turkey bacon until crispy. Crumble and set aside.
- In a large bowl, combine the cooked pasta, corn, red onion, bell pepper, and cilantro.
- In a separate bowl, mix together the mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
- Add the dressing to the pasta mixture and toss to combine. Stir in the crumbled turkey bacon.
- Chill for at least 30 minutes before serving.
