Mexican Street Corn Pasta Salad

A delicious twist on traditional Mexican street corn, this pasta salad features turkey bacon for added flavor.

  • 8 ounces pasta
  • 4 strips turkey bacon
  • 1 cup corn
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/2 cup cilantro
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package directions, then drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Crumble and set aside.
  3. In a large bowl, combine the cooked pasta, corn, red onion, bell pepper, and cilantro.
  4. In a separate bowl, mix together the mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
  5. Add the dressing to the pasta mixture and toss to combine. Stir in the crumbled turkey bacon.
  6. Chill for at least 30 minutes before serving.
