Mexican Street Corn Pasta Salad

A delicious and refreshing Mexican Street Corn Pasta Salad with crispy turkey bacon.

Ingredients

  • 8 ounces pasta of your choice
  • 1 cup corn, grilled or roasted
  • 4 slices turkey bacon, cooked and crumbled
  • 1/2 cup Mayonnaise
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large mixing bowl, combine corn, turkey bacon, mayonnaise, cilantro, lime juice, chili powder, salt, and pepper.
  3. Add the cooked pasta to the bowl and toss until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, feel free to add diced jalapeños.
  • This salad can be made a day in advance and stored in the fridge.
