  • 4 ears corn, husked
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add olive oil and sauté the onions until translucent.
  3. Add garlic and cook for another minute.
  4. Cut the corn kernels off the cob and add to the pot.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the heavy cream, chili powder, cumin, and salt. Stir well.
  7. Simmer for 15 minutes, then add crumbled bacon and cilantro before serving.

Notes

  • Adjust spices to taste for more heat.
  • For a vegetarian option, replace turkey bacon with mushrooms.
