Mexican Street Corn Soup

A delicious and comforting Mexican Street Corn Soup with a twist of turkey bacon for added flavor.

Ingredients

  • 4 cups corn kernels
  • 1 cup diced turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the corn, chicken broth, cumin, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Stir in heavy cream and cook for an additional 5 minutes.
  6. Blend the soup to your desired consistency.
  7. Garnish with turkey bacon and cilantro before serving.

Notes

  • For a spicier kick, add diced jalapeños.
  • Serve with tortilla chips for added crunch.
