A delicious and easy recipe for chicken and noodles that brings comfort on weeknights.

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 ounces egg noodles
  • 4 cups chicken broth
  • 1 cup frozen peas and carrots
  • 1/2 cup onion, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  2. Pour in chicken broth and bring to a boil.
  3. Add egg noodles and cook according to package instructions until al dente.
  4. Stir in shredded chicken, peas, carrots, thyme, salt, and pepper. Cook until heated through.
