One Bowl Banana Chocolate Chip Muffins

  • 1/3 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter, then mix in the egg and vanilla.
  4. Add the baking soda and salt, and mix well.
  5. Stir in the sugar and flour, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let them cool for a few minutes in the tin before transferring to a wire rack.

Notes

  • For a healthier option, try substituting half of the sugar with honey.
  • Make sure the bananas are very ripe for the best flavor.
