One-Pan Fluffy Mixed Berry Protein Oatmeal

Ingredients

  • 2 cups almond milk
  • 1 cup mixed berries (fresh or frozen)
  • 1 tablespoon honey or maple syrup
  • 1 scoop protein powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. In a large pan, combine the rolled oats, almond milk, mixed berries, and salt.
  2. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Once boiling, reduce the heat to low and add honey (or maple syrup), protein powder, vanilla extract, and cinnamon.
  4. Stir well and let it simmer for about 5-7 minutes, or until it reaches the desired consistency.
  5. Remove from heat and let it sit for a minute to thicken.
  6. Serve warm, topped with additional berries if desired.
