One-Pan Bold Honey BBQ Chicken Rice

  • 4 pieces chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups mixed vegetables

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season the chicken thighs with garlic powder, onion powder, salt, and pepper.
  3. Brown the chicken thighs on both sides in the pan.
  4. Add the rice and stir to combine.
  5. Pour in the chicken broth and honey BBQ sauce, bringing the mixture to a boil.
  6. Reduce heat, cover, and simmer until rice is cooked and chicken is done.
  7. Add mixed vegetables in the last few minutes to heat through.
