  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh peaches, sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers and melted butter, then press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat together cream cheese, granulated sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing on low until just combined.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. In another bowl, combine sliced peaches, brown sugar, cinnamon, and cornstarch. Spread this mixture over the cheesecake batter.
  7. Bake for 50-60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For best results, use ripe peaches.
  • Top with whipped cream before serving for extra indulgence.
