Peppermint Swirl Cookies

These Peppermint Swirl Cookies are a delightful and festive treat perfect for the holiday season, combining a rich buttery flavor with the refreshing taste of peppermint.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp peppermint extract
  • ½ tsp baking powder
  • 1/4 tsp salt
  • red food coloring (as needed)
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and peppermint extract, and mix well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Divide the dough in half. Tint one half with red food coloring to create the red peppermint swirl.
  7. Roll out both halves of the dough between sheets of parchment paper to about 1/4 inch thick.
  8. Layer the red dough on top of the white dough and roll up tightly to form a log.
  9. Slice the log into cookies and place them on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until the edges are slightly golden.
  11. Let cool before transferring to a wire rack.

Notes

  • For extra festive flair, sprinkle crushed peppermint candies on top before baking.
  • These cookies can be frozen for up to 3 months.
