- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp peppermint extract
- ½ tsp baking powder
- 1/4 tsp salt
- red food coloring (as needed)
- 1/2 cup crushed peppermint candies
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and peppermint extract, and mix well.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Divide the dough in half. Tint one half with red food coloring to create the red peppermint swirl.
- Roll out both halves of the dough between sheets of parchment paper to about 1/4 inch thick.
- Layer the red dough on top of the white dough and roll up tightly to form a log.
- Slice the log into cookies and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are slightly golden.
- Let cool before transferring to a wire rack.
