Peruvian Chicken with Green Sauce (Aji Verde)

  • 4 chicken breasts
  • 1 cup fresh cilantro
  • 2 limes, juiced
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium heat.
  2. In a blender, combine cilantro, lime juice, mayonnaise, garlic, jalapeño, salt, and pepper. Blend until smooth.
  3. Marinate chicken breasts with half of the green sauce for at least 30 minutes.
  4. Grill chicken for 6-7 minutes on each side or until fully cooked.
  5. Serve the chicken with the remaining green sauce on top.
