  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, eggs, sugar, brown sugar, and vanilla extract until well blended.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Fill each muffin liner with the pumpkin batter halfway, then add a spoonful of cream cheese in the center, and top with more batter until the liners are about ¾ full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the muffins comes out clean.
  8. Let muffins cool before serving.
