Ingredients

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 1 can (15 oz) pumpkin puree
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn, frozen or canned

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, cooking until softened.
  3. Add ground turkey or beef, cooking until browned.
  4. Stir in pumpkin puree, kidney beans, diced tomatoes, and vegetable broth.
  5. Add chili powder, cumin, smoked paprika, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  7. Stir in corn and cook for an additional 5 minutes.
  8. Serve hot with your favorite toppings.
