  • 1 cup canned pumpkin puree

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix sugar, pumpkin puree, oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring to combine.
  5. Drop spoonfuls of batter onto a baking sheet and bake for 15-20 minutes.
  6. Let cool before frosting with the cream cheese mixture.
  7. To make the frosting, beat cream cheese and powdered sugar until smooth, then spread between two pumpkin cookies.
