  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the pumpkin puree, eggs, and vanilla extract. Mix until combined.
  4. In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the butterscotch chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden brown.
