  • ½ cup brown sugar
  • ½ cup vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the pumpkin, sugars, oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each muffin liner halfway and add a sprinkle of streusel topping on each.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
