Ingredients
Scale
2 tbsp all-purpose flour (I use King Arthur all-purpose flour)
1/2 tsp ground ginger (freshly ground preferred)
2 cups chopped apples (about 3–4 medium apples, peeled and diced into 1/2-inch pieces)
3 cups cranberries (fresh or frozen)
1 cup light brown sugar
1 tsp vanilla (pure vanilla extract for best flavor)
1/2 tsp ground cinnamon
8 tbsp unsalted butter (softened to room temperature)
1/2 cup light brown sugar (packed)
1/4 tsp ground ginger
1 pinch salt
3/4 cup all-purpose flour
1/2 cup rolled oats (old-fashioned, not instant)
1/4 tsp ground nutmeg
1 serving vanilla ice cream (optional but recommended for serving)
Instructions
Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish with butter or cooking spray.
While the oven heats, prepare your mise en place by peeling, coring, and dicing the apples into roughly 1/2-inch pieces.
In a large bowl, combine the prepared apples with the cranberries, then add light brown sugar, all-purpose flour, vanilla extract, and ground ginger. Gently toss until the fruit is evenly coated.
Transfer this mixture to your prepared baking dish, spreading it in an even layer.
In a separate bowl, combine the softened butter with light brown sugar, all-purpose flour, ground cinnamon, ground ginger, ground nutmeg, and a pinch of salt. Mix until it resembles coarse breadcrumbs.
Add the rolled oats and stir gently until just combined.
Spread the crisp topping evenly over the fruit filling, then press it down to create an even, compact layer.
Bake in the preheated oven for 35-40 minutes, until the topping is golden brown and the fruit is bubbling slightly.
